Ovis High Valley Cabernet

Amazing wine takes time. From Round Mountain Vineyard OVIS has produced this rich, wonderfully aromatic, and mouthfilling wine. It took three years to find the best block of Cabernet on their Home Ranch and two years aging in the barrel to let the fruit components and tannin meld naturally. For this vintage they blended in 30% of their Circle O Cabernet, a young vineyard, just starting to show off.

Aromas of dried fruits, black currants, toasted hazelnuts, and dark chocolate fuse with flavors of savory herbs, worn leather, dried cherries, and French oak to resonate up through the glass.  Full of black cherries, black olives and blackberries, this firmly structured and full-bodied wine wraps its fruit in firm, fine-grained tannins and spices them with oak notes of cinnamon, cedar and wood smoke.
