Nishide Shuzo 100 Year Sake Junmai Daiginjo

Nishide Shuzo brews up this special batch of junmai daiginjo using a unique yeast that was discovered one hundred years ago, hence the name “100 Year Sake”. This yeast, called kuratsuki kobo (house yeast), only grows within the grounds of the brewery itself.
