Windstream Santa Lucia Highlands Pinot Noir

Combining traditional techniques with modern technology, we fermented each lot separately in open-top stainless steel tanks, periodically “punching down” the cap to delicately extract color without creating excessive tannin. Once dry, we placed the wine in 100% new French oak barrels from a selection of coopers, aging it for ten months. This is a deep, structured wine with concentrated flavors of black cherry, raspberry and dark plum. Secondary notes from barrel aging include brown spice, cedar, and a hint of vanilla. This Pinot Noir shows ripe fruit flavors with balance, finesse, and a long, mouth-filling finish.Windstream Pinot Noir comes only from the best lots that our estate vineyards have to offer. Small lots are picked and fermented individually with minimal intervention to allow the true expression of the soil and climate. The wines are matured in a unique selection of hand-crafted 85% French oak barrels.
