Cabernet Sauvignon was fermented at temperatures between 84° and 90°F. The grapes spent an average of 7-10 days in tank for enhanced color and flavor with the maximum amount of plush mouthfeel. Immediately after fermentation, the fresh, youthful wines were oak aged to begin integrating the dark fruit characteristics with those of the rich, toasted oak.
