The Producer Espadin is produced by Maestro Mezcalero Juan Pacheco Santos in La Noria, Sec. 13 Ejulta, Oaxaca. After roasting for 60 hours, the cooked agaves are crushed by a bull pulled stone wheel. The crushed agaves are fermented for 8 days in wooden fermentation vats. Then it is distilled in a double plated refrescador cooper still.The Producer was created by friends from both sides of the border that traveled through Oaxaca and bonded with the land, the culture, and one another. Out of that trip came the inspiration to build and produce small batch mezcal that’s refined, approachable, and super smooth.
